Ingredients
- 200g Apples (peeled & chopped)
- 200g Pears (peeled & chopped)
- 200g Pineapple (peeled & chopped)
- 100g Banana (peeled & chopped)
- Zest of 2 Lemons
- Juice of 2 Lemons
- 50g Desiccated Coconut
- 750g Brown Sugar
- 250ml Water
Instructions
1. Prepare the tropical fruits by peeling and chopping them into small pieces, ensuring that all the skin and cores are removed.
2. In a microwave-safe dish, combine the diced apples, pears, pineapple, banana, lemon zest, and water. Stir well to ensure all the fruits are evenly mixed.
3. Microwave the fruit mixture on high for 6 minutes to soften the fruits and release their flavors.
4. Carefully remove the dish from the microwave and stir the cooked fruits.
5. Add fresh lemon juice, coconut, and sugar to the fruit mixture. Stir until all the ingredients are well combined and the sugar is dissolved.
6. Microwave the mixture on high for an additional 5 minutes to enhance flavors and thicken the jam.
7. Once again, carefully remove the dish from the microwave and give the jam a final mix to ensure it is well incorporated.
8. Return the dish to the microwave and cook on high for another 15 minutes to reach the desired consistency.
9. Allow the mixture to cool for approximately 5 minutes.
10. Prepare three 250g canning jars by sterilizing them thoroughly. While the jam is still hot, carefully fill each jar and tightly seal them.
11. Store the tropical jam in a cool cupboard away from direct sunlight for up to a year. Refrigerate once opened.

4. Alternatively, you can also sterilize the jars in the microwave, but avoid putting the metal lids in the microwave as they can't be microwaved. It's more convenient to sterilize all the components together in a pot on the stove.
5. After the first 6 minutes of cooking the fruit mixture, if you prefer a smooth jam texture, you can blend the cooked fruits using a blender or an immersion blender. This step will give your jam a silky consistency.
6. Once blended, continue with the recipe as instructed, adding the remaining ingredients and cooking the jam to the desired consistency.
