Ingredients

  • 4 Ripe Bananas
  • 100g Butter
  • 1 Cup Brown Sugar
  • ¼ Cup Plain Yoghurt
  • 1 Teaspoon Vanilla Essence
  • 2 Cups Self Raising Flour
  • ½ Teaspoon Salt
  • 80g Dark Chocolate
  • ½ Cup Blueberries
  • ½ Teaspoon Cinnamon
  • 12 Chocolate Chip Cookies

Instructions

1. Place the butter in a microwave-safe bowl and microwave on high for 1 minute until melted.

2. Chop the dark chocolate into chunky pieces.

3. In a large mixing bowl, thoroughly mash the ripe bananas until creamy.

4. Combine the melted butter and brown sugar with the mashed bananas, followed by the vanilla essence and plain yoghurt. Mix the ingredients until well combined.

5. Gently add the self-raising flour, cinnamon, and salt to the wet mixture, ensuring not to over-mix. Stir until the flour is fully incorporated.

6. Carefully fold the chopped chocolate chunks into the batter, followed by the succulent blueberries. Be gentle to preserve the delightful texture.

7. Place a sheet of baking paper on a firm surface and crush the chocolate chip cookies using a rolling pin.

8. Grease a microwave-safe muffin pan slightly, and fill each mould about three-quarters full with the batter.

9. Sprinkle the crushed cookie crumbs on top of the muffins, creating a delightful crunchy crown. Press a few blueberries firmly into the batter to add a pop of colour.

10. Microwave the muffins on Medium-High setting for 6 minutes. Use a skewer to check their readiness; it should come out mostly clean, considering the moistness from melted chocolate and juicy berries.

11. Serve the mouth-watering muffins warm or cooled down, relishing in their delectable taste and texture. Enjoy!

Notes

1. Customize the Cookie Crumbs: Feel free to omit the cookie crumbs or get creative by swapping them for different flavours like ginger cookies or oats cookies.

2. Allow Muffins to Rest: After microwaving, give the muffins about 2 minutes to rest in the muffin mould. This will ensure they set properly and don't fall apart when removed.

3. Explore Chocolate Variations: Experiment with different chocolate flavours! Instead of dark chocolate, try using milk chocolate or white chocolate for a delightful variation. Chocolate chips will work great too.

4. Paper Cups Option: Don't worry if you don't have a microwave muffin pan. Simply use individual paper cups for the muffins.

5. Serving and Storage: Enjoy these muffins warm or cooled down to your liking. Store any leftovers in an airtight container at room temperature for up to 2 days.

6. Make a Banana Cake: Want something different? Divide the batter between two ring cake moulds and microwave each for 6 minutes on medium-high to create a delicious banana cake.

7. Fresh or Frozen Blueberries: Fresh blueberries work wonderfully in this recipe, but if you only have frozen ones on hand, they'll do the trick too! Just remember to adjust the baking time with an extra minute.
