Ingredients

  • 200g diced bacon
  • 2 tablespoons brown sugar
  • 1 chopped onion
  • 100g tomato paste
  • ½ cup cherry tomatoes

  • 1 cup chopped coriander leaves
  • 1 litre beef stock
  • 1 teaspoon turmeric

  • 5¼ cups baked beans (3 cans)

Instructions

  1. In a large microwave-safe dish, combine the diced bacon, brown sugar, and chopped onion. Microwave on high for 5 minutes, or until the bacon is cooked and the onion is softened.
  2. Add the tomato paste, cherry tomatoes, chopped potatoes, grated carrot, and chopped coriander leaves to the dish. Stir well to combine all the ingredients.
  3. Pour in the beef stock and add the turmeric, salt, ground black pepper, and curry powder. Stir to incorporate all the flavors.
  4. Microwave the dish on high for 10 minutes, or until the potatoes and carrots are tender and the flavors have melded together. Carefully remove the dish from the microwave and give it a good stir.
  5. Add about ¾ of the baked beans to the dish and mix well. Then, add the brown spirit vinegar and stir to combine.
  6. Transfer the soup mixture to a blender and blend until smooth. Return the mixture to the microwave-safe dish and add the remaining baked beans.
  7. Microwave for an additional 10 minutes on high, allowing the soup to heat through and the flavors to further develop.
  8. Remove the dish from the microwave and let it rest for a few minutes before serving.
  9. Ladle the Old Fashioned Bean Soup into bowls and garnish with additional chopped coriander leaves, if desired.
