Ingredients
- 3 Cups Canned Chickpeas
- 2 ½ Cups Mixed Frozen Vegetables
- 3 Cups Soft Bread Crumbs
- 2 Cups Grated Cheddar Cheese
- 1 Grated Onion
- 1 Teaspoon Origanum
- 1 Teaspoon Salt
- ½ Teaspoon Ground Black Pepper
- 1 Teaspoon Curry Powder
- 2 Eggs
- 3 Teaspoons Lemon Juice
- 3 Cups Dried Bread Crumbs
Instructions
- In a bowl, combine the breadcrumbs and curry powder, creating the crumb coat mixture. Set it aside for later use.
- In a microwave-safe dish, add the frozen vegetables and grated onion. Mix them until well combined. Cover the dish and microwave on High for 10 minutes.
- Once cooked, transfer the vegetables to a blender and pulse them a few times, ensuring a coarse texture. Be cautious not to over blend, as you want to maintain some texture.
