Ingredients
- 1 Rooibos Teabag
- 250g Pitted Dates
- 10ml Vanilla Essence
- 200g Flour
- 125g Butter
- 20ml Baking Powder
- 2.5ml Salt
- 5ml Bicorbonate of Soda
- 200g Sugar
- 4 Jumbo Eggs
- 125ml Boiling Water
- 125ml Milk
- 5ml Cinnamon
Instructions
1. Add a Rooibos teabag to boiling water, stir, and set it aside to steep.
2. Chop the pitted dates into small pieces.
3. Add the Rooibos tea to the chopped dates and let them soak for 10 minutes.
4. In a large mixing bowl, combine butter, sugar, and eggs.
5. Whisk the mixture until well combined, achieving a light and fluffy texture.
6. Mash the soaked dates with a fork.
7. Add flour, baking soda, salt, and cinnamon to the butter mixture and mix until well combined.
8. Incorporate the mashed date mixture into the batter and mix thoroughly.
9. Combine vanilla essence with milk, then add it to the batter and mix until well combined.
10. Divide the batter evenly and pour it into three buttered microwave dishes, each with a diameter of 15cm.
11. Place each cake dish slightly off-center on the microwave turntable to ensure even baking. Bake each layer on medium-high power (70% power) for 5 minutes.
12. Use a sharp knife to loosen the sides of the cakes, then carefully turn them over onto a cooling rack and let them cool completely.
